great inns and food in northern France

We will be staying in Ghent, Belgium but would like to do some traveling in France. My husband wants to go to the D-Day beaches in Normandy but they don't interest me as much. We would like to find a place after we have visted the beaches -- not necessarily in the immediate vicinity -- that is beautiful with great food. Perhaps an inn where we could luxuriate.

We have no particular destination. The best vacation I ever spent was biking in the Sarthe region, going from one little unknown gourmet inn to another. Trying to duplicate it would be crazy but any suggestions for where to go would be greatly appreciated. I don't want to go to the Alsace region, where I have been before.
