I just discovered a really great easy, and good, cream cheese frosting (not that regular cream cheese frosting is all that hard, but......)
I made these fabulous Carrot Cake cookies from Epicurious, which I've made many times before.
But instead of their recipe I had used a coupon for a FREE tub of Philly's new Cheesecake filling, and it had been sitting in my fridge for a week or so.
I used that instead, and I realized it would make a great frosting for carrot cake or cup cakes or almost anything that you'd use a cream cheese frosting.
It's not toooo sweet. It really works well.
