Great cookbook (even though it's Vegan)

I've had such great luck with this cookbook, I thought I'd give it a shout-out here. It's the Voluptuous Vegan, by Myra Kornfeld. Ignore the odd name and the odd cover art. This is a great cookbook.

Everything I've cooked from this book has been absolutely delicious. Last weekend I made pumpkin ravioli with onions and sage, with a white bean sauce. I pureed half of the sauce so it was kind of chunky but creamy, and it got such rave reviews from my guests. To go with it, I made her braised leeks and fennel with sun-dried tomatoes and olives, which was out of this world. (Although if you make that, double the recipe as it makes such a tiny amount.)

Other recipes have been big winners, too. These recipes aren't of the "quick" variety - some are quite complex. But the results make it a worthwhile effort.
