I went to Chef King again this past week for dinner and am amazed that people don't mention this place more often. The broth is truly amazing. Very flavorful with herbs, unlike most hotpot places that just give you broth.

So if you want hotpot, they give you a sheet with all the options. You can pick a broth: house (very good), hot (very spicy), and half and half.
You can then choose meats, vegs, and noodles. Each selection costs about $3-$5. For two people, I'd say 4 selections should be enough, though I overordered.

What's even more of a bargain is their lunch. For $8, you get to choose a meat and a veg, and they also add meatballs, tofu, and glass noodles (vermicelli). Also includes a bowl of rice and of course, your choice of broth. Great bargain!
