So I am very concerned about eating raw fish/ cured fish at home.
Can I use any salmon for curing/gravlax? I do not have a chance to buy my fish from fish mongers. I bought my fish from CubFood/Trader's Joe( the fish came out with defrost, so I think they thawed it). Are those fish safe to cured to make gravlax/smoked salmon?
Should I freeze my fish then thawed to cure it ?
