The French Laundry now has a new service charge policy and after a recent dinner there we came across a conundrum. Since a service charge is included in the cost of the prix fixe we were wondering if one should consider calculating a tip on the cost of the wine only. Granted, a tip can be as large as one wants, but what would be the most "acceptable" rate when gratuities are already figured into the price?
