Help with Grandma's Chocolate Cake

Here are the ingredients for my Grandma's chocolate cake and the frosting she made for it. Both the cake and the frosting call for unsweetened chocolate. I am not a baker and don't know how to alter the sugar amount if I want to use bittersweet chocolate (70%) instead of the unsweetened. Also, is there any reason I can't substitute creme fraiche for the sour cream? Will changing out some of the oil for butter have any effect? What about the sweetened condensed milk in the frosting?

Cake:
1 1/2 cups hot water
3 oz unsweetened chocolate
3/4 cup vegetable oil
3 large eggs
2 1/2 cups sugar
3 cups cake flour
1 tsp salt
2 tsp baking soda
1 cup sour cream
1 1/2 tsp vanilla

Frosting:
1 can sweetened condensed milk
2 oz unsweetened chocolate
1/4 tsp vanilla
1 tsp hot water
