"Must Go's" in Bordeaux - Three Days

We are going to be in Bordeaux for three days. We are trying to figure out which restaurants/bars there are the "must try" restaurants and bars. Generally, we look for value. In other words, reasonably priced restaurants with great food. Preferably something around 50-75 Euros a person. We don't need great ambiance, but we do need great food (and, of course, great wine to go with it). Reading here, there are a lot of recommended restaurants that are 100-200 Euros a person for dinner, and a lot of them actually have very mixed reviews. Often, heavy complaints about the service. If I spend 75 Euros or less on a meal, I'm not going to be particularly upset if the service is not spectacular. But if I'm spending 100+, then I would be disappointed. Any recommendations?
