Help me with Gorgonzola please!

alikaprincess | May 4, 201701:55 PM     26

This is going to sound like a stupid request but bear with me. I bought this gorgonzola for a recipe I made some time ago. Sometimes I can go with blue cheese, sometimes I can't stand it. The recipe was, "meh" and it really made me not want to eat the rest of the gorgonzola. But the thing is, I spent money on it. I don't want to just chuck it on the compost pile. I'd like to find a way to use it without it being overpowering (i.e. no gorgonzola cream sauce). I want to find some way I can cook with it, but "hide" it in the dish so it's not super-noticeable. I'm thinking something baked would probably conceal it better, but the only thing I've found thus far is a Buffalo Chicken Meatloaf that sounds like the hot sauce would drown it out, but my husband vetoed it. I know it's dumb to be trying to mute a cheese that's purposely strong but I REALLY don't want to waste it (I wash my used foil before recycling it so yeah, kind of a zero waste nut). Just throwing it in the compost would make it both a waste of money and food. Please don't try to reason with me or make me feel better about throwing it out :) I'm not going to listen to you lol. Just gimme whatever recipes ya got! Thanks in advance.
