good stop on the way to Yosemite

Just recently got back from Yosemite....on the way there we came across a good stop in Escalon. Cancun, a Mexican restaurant, was a pleasant surprise. From the outside, it looked a bit new - I have this romantic idea of unnoticed roadside finds, so I was wary. Inside things looked better...pleasant surroundings, mariachi music, theme paintings, very colorful..with good smells coming from the kitchen. The hostess was friendly and wife and I both had lunch specials....she got a chile relleno and I had a green enchilada. Warm chips that were very light and crispy came with a salsa that didn't look that promising but tasted fine. (the tomatoes weren't very ripe but after seasoning were OK) The Chile Relleno was one of the lightest, fluffiest ones ever...with a pleasant tomato sauce. Rice and beans were standard but well done. My Green enchilada had tender chunks of pork with a tasty green sauce. There were complimentary refills of the diet coke(my wife) without asking. The waitress/host said that they make their own tamales. I'm looking forward to going back to delve deeper into the menu.
