I'll be cooking a (vegetarian) dinner for 35 to 40 diners. The main course will be a hearty soup plus crusty garlic bread and salad. The salad is where I am out of ideas. I'd like it to be a little spiffier than just tossed lettuce but not so fussy that it's hard to scale up.
Very expensive ingredients are not feasible for my budget. I'd want to make the dressing myself, not buy it. Cheese, eggs, fruit, nuts are okay to include, but I need to avoid soy and gluten. Any suggestions? Thanks!
