Just a note to say the slabs of pancetta made and offered at Royal Crown Bakery are really good! Spiced with red pepper and herbs, with a great texture - sort of crispy fat/good thick layer of meat too. Its made flat in a strip rather than rolled. I had a thin slice last night while making baked beans and it was very enjoyable. They only sell a full piece at a time, maybe a pound . I like this much better than their soppressata which is also rather good.
I bought the pancetta at the 14thAve/66th St Store - probably its available at the Bay Ridge locations as well.
