What is good Laotian Sausage?

Are there many different types?

I had this for the first time - Sai Ooa (Baked Laotian Sausage)

It is described as ground pork with Lao Spice. Given the owner's mother owns a restaurant in a different city I'm guess the spices are garlic, onion, chili, and lemon grass, since those are the ingrediants listed in at the mom's restaurant.

This was a solid sausage with a snappy casing. The lemon grass was assertive and the chili gave it a tingly, not too hot heat. Garlic was there, but the least assertive spice.

How is this served other than baked?

Also had a soup called kao Lao which said it had meatballs and beef in it. Those meatballs turned out to be a hot dog like sausage. Any ideas?
