good food in the panhandle

I'm spending a long weekend in Tallahassee/Apalachicola area in March. I lived in both towns over 15 years ago and have not been back since. While there, I ate at a number of great places out in (what were) the sticks and am curious if they're still around. Spring Creek stands out for seafood (esp. stuffed shrimp). I enjoyed oysters and beer at a place called (I think) Posies. Also, a great fried catfish joint was on the banks of the Ochlocknee (sp?) River (Hubbles?). I thought Tallahassee was a food wasteland -- unless you're into buffets -- although there was a great Thai place.

Any suggestions on really good food (cheap or spendy, as long as its good)?
