Good food AND low decibels?

I'm trying to compile a short list of places to keep on hand where the noise level is relatively low and conversation is possible—without sacrificing food quality. Casual or stuffy, I don't care as long as the food is really, really good.

Anywhere in Manhattan would do, price levels too, though I have a particular need in the short term for something not French, Italian, or Asian; upscale, but not top of the scale; preferably in Midtown, east or west, but north or south is fine. (I am considering Sea Grill, which I love.)

I spend only a few weeks a year in New York anymore, but everyone seems to think I know where to eat, but I can't keep up.
