Really good fancy place in Manhattan, somewhat veggie friendly

Hi,

My husband and I are going to be in NYC for about a week. I want to take him to one or two really incredible expensive restaurants in a nice part of Manhattan.
I've been perusing your posts, and made a list of restaurants that seem appealing:

Grenouille
Jean-Georges
Le Bernardin
River Cafe
Montrachet
Nobu
Tabla
Aureole

Can you help me decide which restaurants I should reserve based on the following criteria:

1) I'm vegetarian, so I need one or two interesting vegetarian items on the menu (no fish either)

2) I prefer quality of food and creativity of the menu over decor, but it would be kind of cool to eat at a fancy place :)

3) We're going to be there from the 16th of April until the 24th. Does that leave enough time to reserve?

3) Do any of these place NOT require a jacket and tie?

Any other places y'all would recommend?
