I first had this corn dish from a vendor outside of a thrift store in Chicago (I'm a risky eater), where a guy took steaming whole corn out of a box, cut the corn off into a cup, and he added chili powder, butter, and i think either mayo or sour cream, and some Mexican cheese that looked a lot like parmesan. I took a bite and had to hold on to the little cart to regain my composure over the little bit of heaven in my cup. I've also had it straight off the cob with a similar mixture slathered on.
I really want to make some for Cinco de Mayo...so does any one know what exactly the white stuff was, and what kind of cheese is typically used? Tyler Florence on Food Network uses parmesan, but I know it was a Mexican cheese...also any suggestions on a good-tasting chili powder (as in what type of chili pepper) would be great.
