During dinner last night at China Star we decided to try a new dish, the Sichuan Chili Fish. Clearly it's based on SIchuan Chili Chicken, though instead of chicken it has moderate-sized (about 1" square) slices of fish, which are fried in a coating of sichuan pepper and other spices until the exterior is rather crispy and the interior remains soft and succulent. It is then mixed with a copious amount of snipped chilies. Of course it is very spicy, but not too much so, and the flavors are nice and complex. A winner.
