The Good Old Days . . . and lo-fat recipes

I was just asking my mother (85 and going strong) about a curried chicken salad she used to make. She told me that after poaching the chicken in wine and spices she would saute almonds in butter then "add remaining butter to the mayonnaise." I cracked up. No wonder it was so good! It got me thinking of recipes I used to make with impunity that haven’t been in my repetoire for years--or at least for the last 25 pounds. Pork chops smothered in heavy cream. Chicken fried in bacon fat.

It also got me thinking, since I have 15 of those 25 pounds to go, about easy, versatile, lo-fat recipes. My current fave: Spread skinned, seasoned, chicken breasts or thighs with combo of lo-fat yogurt and dijon mustard; dredge in seasoned bread crumbs; and bake. Really good hot or cold.

Need more ideas. Anyone have similar reliables to share?
