Good cooking class ?

I want to take some cooking classes in San Diego. I just moved, and have no idea where to go. I want to learn baking (cake), bistro type french food and Italian. From where I came from, Hand-On was typical style. If you don't see Hands-On in the class description, does it mean that you just watch the instructor cooking? Can you at least taste the food?
