No Such Thing As Too Much Of A Good Thing: Bill's Restaurant, Owensboro, KY

First, a disclaimer. I rarely can indentify the ingredients in a dish. If I am blown away by a dish, I ask for details. As was the case with this dish.

We each started with a cold asperagus bisque, with tomato puree, and pistachio oil. Soothing to the body and soul.

Main course, we both had the Icelandic Turbo. I'm not sure I've had Icelandice Turbo before. It had a delightful fleshy texture, not too fishey but neither was it bland. Absolutely wonderful.

It was very lightly fried (when dining at Bill's, I never taste the heavier taste that I associate with fried). It was prepared with aged sherry vinagar, ramps, pearl couscous, and bits of bacon. These flavors blended together perfectly.

We are headed down to Sarasota, FL in a few weeks. I have already selected restaurants in Atlanta and Valdosta, Ga. Hope to report on those soon.
