Hello. I've tried several restaurants throughout northern VA selling BBQ, but I've yet to find any as good as what I make for myself. I've noticed the meat is usually lacking, has no smoke ring, & is covered with sweet BBQ sauce. One place told me they use a real wood smoker only if they absolutely must. I mainly cook with wood & a little charcoal, preferably 100% all-natural lump or briquette depending on the task. I'd love to cook & sell my own BBQ. Any thoughts how to get started?
