Good(authentic?) Chinese Food in Triangle?

My husband and I just moved to Chapel Hill a month ago and are looking for a really great Chinese restaurant. I grew up in the San Francisco Bay Area in a Chinese family of chowhounds and I also lived in NYC for a while. What I'm looking for is a good, authentic, out of the way restaurant. I've tried Jade "something" (Palace?) in Carrboro, Shanghai in Durham and China One in Durham. The dim sum at China One was OK--I'd go back, but the dinners we had at the other two places were marginal at best (but I have really picky standards). If anyone has a recommendation of a really good Chiense restaurant--the kind of place where you can get either a Chinese menu or can talk to the cook and order something that is NOT on the menu (homestyle), I'd really appreciate it.
