I'm having a Champagne tasting and everyone is allergic to something so I'm having trouble coming up with enough luxe apps.

What about some really rich, smooth mashed potatoes on a thin crispy baguette crostini and then drizzled with some minced truffle in melted butter? I personally would like it but it is not something I've ever seen so...what do you think?
Kind of like a brandade minus the salt cod but with truffle?
Any other potato suggestions? TIA
