golden colored ginger dressing dryish taste --no soy sauce/ketchup/carrots

At several sushi restaurants they serve a golden-colored ginger dressing on salads--which I also eat with the sushi. I have searched for several months unsucessfully to find this recipe.
Here is my description:
It is golden colored with a grainy (ginger?) texture
there is no orange color--no carrots or ketchup
there is no salty or garllic taste
it has a strong ginger taste that is somewhat dry taste --is this mirin? or sake?
