I have a unique reaction to goat cheese (I have yet to find one other person who reacts as I do). But, many recipes call for it as a key ingredient.
I'm looking for recommendations for substitution in recipes.
More specifically, I'm thinking of recipes involving casseroles and similar where the cheese is a component.
Consequently, there might be a different substitute based on flavor and others based on performance (consistency, texture, etc)
If anyone thinks they might share my reaction to goat cheese (which is like narcolepsy....I'll sleep all night, most of the next day and most of the next night if I've eaten a serving's worth) - I'd love to hear from you.
