GM Wine

There's an interesting article on using genetically modified yeast to improve the quality of wine on New Scientist (see link below).

For the record, I'm against GM foods in general. However, I find the subject interesting and try to follow the developments. GM yeast sounds less objectionable than other products since there is probably little danger of polluting the natural gene pool like we've seen with corn.
