Gluten-free dessert for bridal shower brunch

hungry_united | May 16, 201601:20 PM     20

I'm cohosting a bridal shower for a dear friend and we are planning to make a buffet brunch. The bride is gluten-free -- any suggestions for a gluten-free dessert I could make her? I love baking but gluten-free is not my area of expertise so I'm hoping to find a tried-and-true delicious recipe. Bonus points if it could be in individual portions (like using my mini muffin tin) because somehow that just seems more festive. I have made Orangette's Hearts & Minds flourless chocolate cake for her a few times, but not sure how that would work in mini muffin liners. Any other suggestions? I am going to be making a yogurt/fruit compote parfait but would love to serve something sweet / baked as well. Thanks in advance!
