My step-father-in-law is one of the sweetest people I know. He has had some serious health issues and has figured out recently that by eliminating gluten, he is improving how he feels. We live in a rural area, however, and so, once a month, he and my mother in law trek 45 minutes away to stock up on all of his special grocery supplies. The trip is a pain in the a## for both of them as their schedules are already full, and the items he needs are pretty expensive. He really likes his sandwiches, and gluten free bread is quite expensive. My mother in law tried to bake some, but it came out like a brick. I would love to be able to bake up a few loaves of delicious sandwich bread, anything to make this transition wasier for both of them> (My mother in law decided to go gluten free too, just to make it easier on him to not have any temtations in the house, isn't that so sweet?)
I know there are a lot of gluten free chowhoounds, hopefully you are bakers too, and can recommend both gluten free breads and maybe even some (low sugar) snacks?
