Global knife sharpening method

I recently purchased an 8" Global chef's knife after what seemed like a good bit of research trying to find a decent first chef's knife. I have been planning on learning to sharpen knives using a whetstone and recently purchased a Chosera 1000 grit as a general purpose whetstone (the consensus seemed to be that 1000 grit was good if one was wanting to purchase only one stone to begin with). The more I have looked into it I see many on various forums debating using a sandpaper and mousepad method due to the convex shape of the Global's blade. All of the youtube videos I have seen on Global's channel show them being sharpened on whetstones using what I assume is a pretty traditional method. Should I just go buy a cheap mousepad and some sandpaper and return the whetstone? Or am I overthinking things and would it be just as good to sharpen it using the whetstone? Thanks in advance.
