Ginger snap recipe that is hard and chewy?

I once made a batch of gingersnaps that were the perfect texture, a little crisp on the outside with a dense hard chewy center. The problem is I do not know what recipe I used. Does anyone have any suggestions? I have been doing some research and maybe I made them shortening? rather than butter? Did I use a half/half combo? I have also just rendered some beautiful creamy white leaf lard? Could I use that for shortening and get a better result?

So TLDR-anyone have a recipe for a hard dense super toothsome chewy bite that is maybe a little bit crisp on the outside?
