There's a restaurant I've been to, bills itself as "west indies soul food". They serve a ginger drink that I want to recreate. I couldn't get much info from the staff. Here's what I do know.
It's pretty concentrated--strong flavor
Am fairly sure that it is not cooked/boiled
Don't think there's any juice in there, but can't be positive
It does have some sweetener
It is NOT fizzy
It is NOT alcoholic
I tried recreating it by grating fresh ginger and soaking it in some water. The color is wrong; it's darker than the restaurant's version, which is a light and pale yellowish color.
Any suggestions or experience to help me get to a homemade version?
