Ghirardelli Brownies -- eh...

My son has a halloween party and I was assigned to make the brownies. Rather than go by a mix, I searched this board and thought I'd try the Ghirardelli brownies from the canister of ground chocolate and cocoa. It got a lot of raves.

I made a batch, and I'm just not impressed. Texture is perfect. Chewy, moist, etc. But the flavor is not intensely chocolate. It has a pronounced caramelized dairy flavor. Like the difference between a Cadbury milk chocolate bar (which, ironically, is my favorite) and a bittersweet bar.

I keep running into brownies that are either too fudgy/chocolatey -- like flourless chocolate cake (great, but not a brownie), or too "cocoa-ey". I want chewy brownies that also taste like dark chocolate. When I was in college at Penn, the best brownies I'd had were "Rachels Brownies" -- which I think were locally made. If I could reproduce those...
