I was perusing around Kalustyan's (NYC) yesterday and noticed a jar of ghee for sale and was intrigued. I didn't wind up getting it because I'm not really sure how to use it. I know its akin to clarified butter, but what are some uses for ghee besides brushing it on a chipati? I was thinking it might be good to brush on a steak before searing it in a cast iron skillet. Can anyone tell me what I can use ghee for? Can i use it interchangably for butter/olive oil in cooking?
