Just found out that Il Fornaio has the ability to prepare meals GF. Now my experience is with the Old Town Pasadena restaurant.
The manager there that spoke with is named John; he is very helpful and understands Celiac. I believe he was in med school so he was very helpful and SHOWED me how they prep food. They keep the pastas separate from the other dishes. He knows exactly how things were prepared, and if there was a risk. He even went down the list of their products and let me know almost everything is made from scratch so he knew what was safe. He also mentioned a few dressings that he was not sure of so suggested we stay away from them.
Something else John let me know about was that some, or most, of their soups, are GF. He knew the bases, the ingredients and also has lists in a notebook. So if you want soup at a restaurant you can have it now.
I sat at the bar at the kitchen bar for lunch one day to watch how they prepare things. I was impressed. The pastas were kept separate. The salads were not cross-contaminated either. While I was there was never an breads put on the grill that cooks meat. I watched for a good 45 minutes and did not see any issues.
When we ate lunch there a few days later we let the server know our needs. While she did not seem to understand the condition immensely, she was very professional and double checked with us what we needed, what we could have could not have etc. I must admit she was great.
Now I can only speak for my experience with the Pasadena facility and we will go back. It’s great to find another place to eat. And Italian to boot.
