Georgian or Russian Cheeses for Kachapouri?

The recipe in the LA times uses Mozzarella and Feta. Somehow, I don't think that's authentic in a Georgian egg/cheese pie.

Anyone have a suggestion of more authentic cheeses, and perhaps a pronunciation aid?

I want to make one for my Husband's birthday party this weekend.
