I have a GF grill (roughly 12 x 16 inches) with a hinged lid and recently made some pretty good panini using fresh mozz, procuitto, speck and a Portuguese country bread. I lay my cutting board on top to press the lid down.

The panini come out nice and toasted (no oil required on the bread) and real tasty.
