Gelatinous Chickpeas/Garbanzo Beans Canned Solidified Jelly

shawnchong | Aug 23, 201808:14 PM     1

I just wanted to update a post from 2007 regarding solid or jelly-like substance surrounding canned chickpeas/garbanzo beans and whether or not they were safe to eat. It recently happened to me with non-expired, non-dented, non-punctured can of PC Blue Menu chickpeas, and the answers on Chowhound from the 2007 post were inconclusive. I emailed President's Choice and this was their response:

Thank you for your email regarding our PC Blue Menu Chickpeas.
Chickpeas are soaked 8 to 12 hours depending on the initial moisture content. Subsequently, the chickpeas are canned with water with or without Sodium Chloride.
Chickpeas are then sterilized. Following this heat treatment the water (brine) becomes thicker . Depending on the amount of starch released, chickpea brine will be more or less viscous, which can form a gel with time.
There are many variables that can lead to this phenomenon
One being the temperature changes during the growth cycle of the plants influences the humidity and the presence of starch .

We apologize for any inconvenience this has caused.

And then the representative confirmed with me that they were indeed safe for consumption. Hope that helps everyone in the future looking for this information!
