We have not eaten supermarket pork in about ten years since Whole Foods arrived nearby. I know their Niman chops are grade 'B', and the Niman organization has been sold to a parent company. They are still the best pork chops. Now, we've got a new farm to table store that just opened, and they have local ossbow breed pork chops. I chickened out last weekend for fear of a strong flavor that none of us would enjoy. We always grill them, plain, over lump charcoal and hickory. Any input on the flavor of heritage pork? TIA.
