Galatoire's or Commander's Palace for dinner?

Hey, all.
My DH and I will be in NOLA for five nights at the end of Jan/beginning of Feb and I'm wondering, if we only do one for dinner, should we pick Commander's Palace or Galatoire's? I've never been to the city and he hasn't been in decades, so I'm trying to find a happy medium in our choices between "classic" NOLA and places that are just damn tasty. He'll be in conferences all day, so doing one for lunch isn't an option, and I'm worried that if we do both, we risk missing out on some places that have better food, but less of the "experience." Shortlist for other dinners are Cafe Amelie, Sylvain, Clancy's, Brigsten's, and Coquette.

Also, we're staying at the Meridien by the casino, so any recos for quick breakfast places near the hotel would be greatly appreciated.
