The Furnari family lost their home in the Carr Fire. They donated Sicilian sausage to Operation BBQ Relief to feed first responders and evacuees last year. The sausage smelled really good in the ovens but I didn't get to taste it. So I decided I'd buy some to take home in order to support them during this terrible time.
The business operates out of Sizzle's, a commercial kitchen in downtown Redding. Scott waited on me, and apologized that the Sicilian was not available because the stuffer broke. That will be a $2,900 repair. So I bought Italian, Linguica, Chorizo, and French andouille, ringing up $32. Then Scott said he could sell me the Sicilian in bulk since it was cured and ready to stuff. Sure! He vacuum sealed a pound for me, then refused to take my money. I didn't have any more small bills so I couldn't throw money at him.
I brought my sausage bounty back to San Francisco with me and a friend cooked up the patties of Sicilian for our dinner. As delectable as I'd hoped for with a coarser grind, well-balanced spices with a touch of heat, just the right amount of fat to keep things juicy and moist.
So I hope y'all will patronize this sausage maker and help Furnari get over this setback.
