Fun with the 40cm Rondeau

About 6 weeks ago, I finally grabbed the rondeau from E.Dihellerin. Finally, today, I found the time to use it. I made a large batch of bolognese, so hopefully last over the next few month :).

I modded my own recipe that I created from few others, and it consists of 12.5lbs of meat (7lbs of beef, 3.5lbs of pork and 2lbs of lamb). Pound of livers (I wanted to use 2, but they didn't have it). 2 Bags of carrots, celery, and 4 Large onions. Thyme, rosemary, sage was doubled and I used a whole bunch of parsley.

Overall, I started prepping around 10:30am and the pot was done around 6:30pm. Stove part was approx 2.5hs and oven about 4.5hrs.

Pot performed excellently. I only had to move from low to med low when I added the meat to get that cooking faster. Otherwise, I got decent boil at low heat. Thanks to 18lbs of 3.5mm copper.

Overall, it came out very nicely. Little looser than I expected but my last batch was a bit tight, so this should be perfect.
