Fujianese specialties?

So i 've been reading about the changing ethnic composition of New york's chinatown and remembered a write up of fried tofu with pork dipping broth at a fujianese place here in chicago but I don't know anything about the cuisine and what differentiates it from other regional chinese cuisines. What dishes should I be looking out for?

To further illustrate my ignorance - is this the same as fukien? Are there other terms used to describe the cuisine?
