Fuel - Denver

Had a fantastic meal at Fuel last night. I know they've been open for awhile, but it took me this long to make it there, I'm now sorry to say. We went for happy hour (5-6:30). An amazing blood orange margarita was the standout among the several cocktails we tried. I know they change the menu seasonally, but the burrata plate was absolutely amazing - came with broccolini and a mixture of capers, currants, parmesan? something else - otherwordly. ( am a devoted fan of Osteria Marco's burrata - it's probably better for the purists, but the plate at Fuel was all the more amazing for its accompaniments). Also fantastic was the farro salad and the spinach lasagnette - one healthy and making the most of incredible but simple ingredients, the other hearty, warm, and flavorful for a cool night. Tried the radicchio involtini also - good, but I wasn't as blown away by it as by the other plates. Service was very personable and attentive. Dining room is small - quiet enough for conversation, but lively enough for fun. Two desserts on the menu - a vanilla bean pannacotta, and a salted chocolate tart. I had my heart set on the chocolate, but I was told that it wasn't quite ready yet - we were eating quite early. We ordered the pannacotta, which was still amazing, but as the kitchen knew that I had to have my chocolate fix, the sent us a whoopie pie on the house with their apologies. :) Those special touches make for a happy customer - one who hopes to return to Fuel soon.
