I've just started on a fudge kick using some recipes out of "Oh, Fudge." Didn't care for the butter fudge, but the "traditional" cream and sugar fudge isn't half bad. My question is: how much chocolate do you think I can add to the recipe without ruining it? The basic recipe calls for 1 cup cream, 2 cups sugar and 2 oz. chocolate, which creates a good fudge, but not chocolately enough for me. I know I can mess around with this as much as I like, but does have an opinion on whether I can go up to 6 oz. of chocolate on this or should I start at 4 oz.? Looks like the well-known Mamie Eisenhower fudge recipe calls for 24 oz. of chocolate, but this is obviously a very different recipe with a larger volume (4 1/2 cups sugar, marshmallow fluff, etc.).
