I'm the volunteer caterer for a non-profit fundraiser that's coming up in 2 months. One of the appetizers we're serving will be small skewers with a bite of cheese and a piece of fruit to go with the wine and champagne. As I'm working on details, I'm realizing that my favorite cheese and fruit pairings aren't going to work well because the cheese isn't the right texture for a skewer or because the fruit will brown too quickly. Can anyone help me out by suggesting great skewerable (That's a word, right?!) cheese and fruit pairings? Thanks!
