frozen sandwiches & grab/go lunches

Was hopuing Mother Nature would cooperate and allow me to open windowsif just for an hour or so... NOT! Since I enjoy cooking/eating MUCH more than say CLEANING... was on a bit of a cooking frenzy.

Started a beef/barley soup Friday after getting home from school. Found a can of Progresso French Onion soup on "pantry" shelf in garage that need to be used... "slightly" past best by date. Grabbed jar of homemade beef stock and container of frozen HM stock. It came out VERY beefy!! Was able to restrain myself and produce a pot... not a POT full. Have a container for lunch tomorrow (or Tuesday) and ended up with 3 for freezer in single serving sized containers. Can grab one frozen and just eave out on counter in faculty room till lunch time and nuke till hot.

Decided to make stuffed peppers... 2 frozen and vac sealed for later... other 2, half picked at and enough for lunch tomorrow or Tuesday. Had more ground beef mixture than could possibly fit so made a small meatloaf.

That brings me to frozen sandwiches. When I was a kid, one of my jobs became making Dad's lunch. He insisted on bread being buttered, if only a thin layer. That way you could build a sandwich or 2, WITH condiments (mustard, ketchup, etc) and bread didn't get soggy. Now have 2 hefty meatloaf sandwiches ready to grab from freezer for future lunches.
