frozen puff pastry for quiche crust?

I would like to make a quiche in a tart pan with a really flaky crust. I am not a fan of using pie crusts, since I don't find them to be flaky enough. I thought about using frozen pastry puff sheets. I am worried that the pastry will puff up too high in the shallow tart pans for the egg filling. Should I weigh the pastry puff down w/another pan or bowl while I prebake it? Or does anyone have a good, EASY, quick recipe for a good crust? Thank you in advance! :-)
