I bought a Cuisinart ice-cream maker and have been
experimenting with a lot of ice cream recipes, but
I haven't been able to find one for frozen custard.
My ice cream recipe calls for 2 C heavy cream, 1 C
milk, 3/4 C sugar, and 2 eggs. This makes a nice
sweet cream base into which I can throw crushed up
oreos or heath bar.
The problem may not be my recipe but I'm not sure.
The recipe is actually Ben & Jerry's, but my finished
product doesn't come near the smooth and creamy consistency of B&Js. I believe the problem is that
my machine is letting too much air into the ice cream. I thought about installing a dimmer switch between the plug and the socket to control the speed at which the
freezing container rotates, thus letting in less air.
But first, I want to know if my recipe is on the ball
for frozen custard.
Any advice or warnings would be welcome!
