So it's been about a year since Louisiana and I have cajun/creole on the mind. But so far I have not found fresh crawfish anywhere around me, and don't have the money to order direct. Should I even bother with frozen crawfish meat? If so is there a brand or type I should look for (with headfat, without...)?
Along the same lines I made a killer red beans 'n' rice this past weekend, with garlic duck sausage, and I made my peace with spice mixes. I have heard that in some parts of Louisiana etouffees and even red beans are served over mashed mirliton - anyone know if this is true?
